Thats kinda what we were thinking. I really love this cabinet pantry. We might do something like this on the back section with a shallower one on the left. Was thinking of having cubbies so we can have things more organized and able to adjust shelves as needed,
It would be about 40" wide by 14" deep. Not sure we can get the shelves on the side of doors though.
