This looks nice. A 3" gap might do it but not convinced that a 1.5" tall pocket will work. Seems too shallow. With this photo it's tough to tell. Might need a mockup?

Might be a way to delineate the kitchen - not necessarily by tiling the ceiling, but some kind of in-plane change of material or color, with a reveal bead around it... too contemporary??
